Yes, it is January...
Well, actually tomorrow is February 1st, and I still have up a Christmas blog design! And some of you thought I had forgot! Let me explain. I have a new design coming by Fabulous K Creative that will indeed be fabulous! It is not up yet, because she has been waiting for me to send her a picture of us. I have a friend that was going to take some pictures of Kyle and I since my hair is brown now. I was planning on doing that this week until my sweet husband had a hunting accident on Wednesday night. We were suppose to be at our staff Christmas party (yes, delayed to January because of everyone's schedules) in about 30 minutes, and he walks in the door with blood all over his face! As you can imagine, I was quite alarmed! Apparently while he was hunting with Isaac, the gun backfired after he shot, and he got "kissed" by the scope. He was definitely being tough, but when he got out of the shower he was feeling light-headed. I then begged him to let me take him to the urgent care center. Good thing we did! 7 stitches later, we were leaving the doctor's office. The doc actually offered me a once-in-a-lifetime opportunity to look at Kyle's skull--that is how deep the cut went! I could not look though. Just seeing the cut was enough! Kyle's eye is looking better every day, and he gets the stitches out tomorrow! The doctor said, "it will look so good that if you are in Miss America and don't win, it won't be my fault!" All that to say, the new design should be up soon! At least it gives you something to look forward too!

Girls Night Out: Marian Jordan
Thursday, January 28th, 2010 will be a day that I will never forget! After weeks of preparing, Girls Night Out had finally arrived! Girls Night Out is an outreach event specifically for college women featuring well-known author Marian Jordan. Marian has written three books: Sex and The City Uncovered, Wilderness Skills for Women, and The List. During Girls Night Out, Marian shares her story in a very powerful way of how the Lord brought her from complete emptiness to being a redeemed girl. Her story is the story of almost every college girl: searching for significance in sex, appearance, relationships, and other things that ultimately will not satisfy. Marian shares about her life in college, and after graduation, and how true satisfaction can only be found in Jesus Christ. Marian spoke to about 1600 girls on Thursday night at the Tad-Smith Coliseum at Ole Miss, and 114 girls prayed to receive Christ! I am still blown away at the work the Lord has done! We do indeed serve a mighty God! This was the largest women's outreach event ever in Ole Miss history! Would you please join me in praying for a few specific things?
- Pray that this would begin a revival amidst college women at Ole Miss...that Ole Miss women would be a group of women that are passionately in love with Jesus Christ, and live to make Him known to other!
- Pray that we would be able to follow-up with the 114 girls! And that as we follow-up with all these girls, we would be able to equip them with the necessary tools to further develop their faith.
- Pray for protection from the enemy: he would love to speak lies to these women, and have them return to their evil ways. Pray, pray, pray that the enemy would be binded away from Ole Miss!




"At the Hollywood"
The week before school started, Kyle and I went with a group of friends to The Hollywood Cafe in Tunica. If you have ever listened to Walking in Memphis, you may recall the line "Now Muriel plays the piano every Friday at the Hollywood." In the 1980's, a gospel singer named Muriel did indeed play the piano every Friday night at the Hollywood Cafe. Kyle's grandparents often went to hear Muriel, and every time they walked into the restaurant Muriel would stop and play Dixie just for them. If you are ever near Tunica, make sure you dine at the Hollywood. According to the Travel Channel, the deep-fried pickle was born at the Hollywood. They were definitely the best I have ever had!
At the Zoo
Hello there! I guess you can tell that school has started back with my lack of blogging! I hope to catch you up today on the most recent happenings in the lives of the Coles! Two weekends ago, we took a trip to Louisville to visit Laura, Kevin, and Molly Kate. Kyle and a friend road tripped to several different basketball games while I visited with my family. On Saturday, we took Molly Kate to the zoo. I had a blast just watching her! It is so fun to see her sheer delight while looking at the animals. At one point, she looked at me and said, "I am having so much fun with Amy!" It made my heart melt! It was a quick trip to Louisville, but I was so glad that we were there to celebrate Mikias passing court! They will be bringing him home at the end of February, and we cannot wait to meet our precious nephew! Guess we will be making another trip to Louisville soon! As we were leaving MK said, "I'm so sad my Amy is leaving." I wanted to pack her bags, and bring her with me to Oxford! Oh, how I pray that they will one day live closer! You can pray that too!

Crazy Love

Crazy Love was on my 2009 book list. I just finished the last two chapters this weekend. It is a book that I would highly recommend reading. I have come to admire Francis Chan greatly, and the Lord has used him to help me see more clearly the depth of my sin, yet how vast is His love and grace is in spite of it. His love for us is CRAZY! Chan also challenged me to live out my faith more radically (against the status quo), and in complete surrender to the Lord holding nothing back. I have previously posted about Crazy Love here and here. Please feel free to go back and read these. I will leave you with a few of my favorite quotes from this book. Waiting on the Lord

It has been quite some time since I have posted an update about our fertility journey. The last time I shared about our experience was post-surgery. I often have thought about giving an update, but we did not yet know exactly what we were facing. After my surgery, we were quite hopeful due to all the positive results the doctor had shared with us. Then, around Thanksgiving we had some further testing reveal that our situation was not looking good. In fact, we were told that In Vitro may be our only option. It was definitely hard to be thankful and experience joy when our hearts were completely broken. I felt like I had been on a roller coaster, where at one point things were so up, and then the next minute completely down. I remember lying in bed one night talking with Kyle as we discussed that this has been the hardest thing we have faced in life thus far. However, the Lord continued to sustain us, and we were awaiting our doctor's appointment on January 13th with much anticipation. From Thanksgiving to this appointment, I was absolutely stunned at how the Lord strengthened me. This is not to say that I still don't have a really bad day, but I truly believe the Lord has given me an incredible amount of peace. Recently, I ran into an acquaintance at the bakery in Oxford. She is expecting twins, and as we were talking I realized we have the same doctor. She shared with me that she has lots of medication left over, and is willing to give it to me for free! How sweet is the Lord! I felt that this was definitely the favor of the Lord upon us! Our appointment on January 13th was definitely not looking good, but we still remained hopeful. As I was walking into the doctor's office, I just felt the Lord telling me, "WAIT on me! I am good, I have not forgotten you. Just trust in me, and WAIT on me." The appointment actually went well, and might I just add that we could not be more pleased with our doctor! He is wonderful! We had done some testing the previous Monday, and our stats had largely improved. The doctor actually gave us several options other than In Vitro. This was huge, because we were expecting to only have one option. According to our test results, if our blood could just be switched we would have the perfect scenario for having a baby. For some strange reason, our hormone levels are backwards. I could give you lots of medical jargon, but that would probably just bore you. So, I will spare some of the details. As for now, I am going to try some different medications, along with hormone injections, in hopes that this will help my follicles to mature and produce an egg. Kyle and I are both praying this first protocol will work, and we will not have to proceed further. Thus far, my body has not responded positively to any medication, so I would ask you to boldly pray for the medicine to work. I am definitely not placing all my hope in this being our answer, just so that I am not disappointed if it does indeed fail. However, I am trusting that the Lord hears our prayers, and will bless us with a child as we WAIT on Him! Thank you for your prayers, and for walking through this with us! We both have been so blessed by your encouragement, and our certainly grateful for your friendship!

Our Nephew Mikias is Coming Home!
About 15 months ago, my sister and her husband began their adoption journey! Three months into the process, the Lord led them to adopt an older child, and that sweet boy is Mikias! Their first court date was May 18, 2009. Mikias did not pass court the first time, and since then they have had five unsuccessful court dates! Many friends and family (including us) have faithfully prayed for months that the Lord would bring home their precious little boy! On Friday, Mikias finally passed court!!! Our hearts are overwhelmed with excitement, and we rejoice in the fact that the Lord is good, and He does indeed hear our prayers. Mikias will be home sometime in February, and we cannot wait to meet our new nephew! My sister created this video to share with all of those who had prayed for his homecoming. I just cannot get enough of his sweet smile, and I am sure you will feel the same! They are also adopting a 20-month old boy, and praying that his paperwork will be complete soon. Please continue to pray for them, their perseverance, and that this boy would also be brought home soon!

Book List 2010
Here is my 2010 reading list! I began using a published list in May of 2009, and over the next 8 months it helped me to read 14 books! As I have said before, I am totally a list person, and this helped me to stay focused and complete the task! Reflections of 2009 & Dreams for 2010
Although 2009 was filled with various trials for us, it still had numerous memories that I will always cherish. Therefore, after reading a post by a dear friend of mine, I have decided to recap my favorite memories of 2009 for each month. As I have entered into my adult years, I am realizing more and more that the years do indeed fly by. I thought I would record these memories on our blog so that we can continuously reflect upon them, and rejoice for He has done great things!
January: We kicked off the New Year at the Cotton Bowl, and brought home a win beating Texas Tech 47-34! Kyle celebrated the win at Six Flags and I spent the day shopping in Dallas with Chelsea, a disciple and friend of mine. Kyle and I also had a wonderful date night in downtown Memphis at a Brad Paisley concert!
February: It snowed in Oxford! This is quite a big deal in Mississippi, and it was our first snow in our new home! We celebrated Valentine's Day at The Oxford Heart Ball. Campus Crusade hosted a Women's Retreat, and I got to share on worldliness...what a fun weekend with the girls!
March: Legally Blonde at The Orpheum with my best friend Hayley! Kyle and I took 30 students to Italy for Spring Break, and for the first time Isaac had a student pray with him to receive Christ!!! At the end of March, my sister and niece, Molly Kate, came to visit me for a week!
April: We celebrated Easter with Kyle's family in Oxford. I planted my first blueberry bush, tomato plant, and a pot herbs. I went to a cooking class with three friends given by the chef of Yocona River Inn...we learned how to cook puff pastry a thousand different ways!
May: Kyle and I celebrated our 3 year anniversary with a trip to the Delta! We had dinner at Giardina's with bread pudding for dessert, and spent the night at The Alluvian. What a fabulous day! We also spent three weeks in Destin at Greek Summit, and took 4 students with us. It was an incredible project, and we loved getting to know the students from SC!
June: Girls Weekend in Oxford...Katie, my best friend from childhood, her mom, and my mom all came to Oxford for the weekend. We ate, shopped, and ate some more, and stayed up talking for hours! So much fun! Our dear friends Craig and Missy got married, and we had a blast all weekend long. One of the best rehearsal dinners ever!
July: This month was jammed packed with memories! ALL of my family came to Oxford to celebrate the 4th, and they all stayed in our house! We watched the fireworks at Swayze Field for the first time, and Molly Kate loved it! Kyle and I took a trip to Chicago, and had a wonderful time: we toured every museum in the city, ate some delicious deep dish pizza, and watched the Cardinals beat the Cubs! I celebrated my 27th birthday in Chicago with some shopping on the Miracle Mile, and Kyle also had a surprise party for me in Oxford! We ended the month in Colorado at our National Staff Conference. We loved hearing from Tim Keller, and had lots of fun hiking with The Jenkins!
August: Ole Miss graced the cover of Sports Illustrated for the 3rd time in one year!
Chick-Fil-A opened its doors in Oxford! Back to School, and Coach Houston Nutt spoke at our first weekly meeting! Kyle's grandfather celebrated his 77th birthday!
September: Our women's ministry held its first progressive dinner, and Christie, Callie, and Chelsea hosted a spectacular dinner at their home. Football season began, and we eagerly awaited what was in store for the #6 Ole Miss Rebels.
October: Davide, the Italian student that became a Christian over Spring Break, visits Oxford for 12 days! Oh, did we have fun with an Italian in MS. He attended his first college football game, and cooked 5 lbs. of pasta for The Grove. Fun times! Kyle and I dressed up as a Taco, and a Mexican for Halloween!
November: Laura, Molly Kate, and I visited Brandon, and Hattiesburg for several days. I enjoyed spending time with all of my family, and shopping at Mistletoe. Kyle and I spent a week at Orange Beach with my family, and celebrated Thanksgiving with all the Thompsons.
December: Extreme Makeover: Home Edition, need I say more! What an incredible opportunity for my Dad, and I am extremely grateful that we got to share in building the Heathcock's home! I hosted a Christmas dinner for Kyle's family, and we enjoyed an evening of fondue, and games! After many parties, and lots of fun-filled family time, we headed to Atlanta for Unveiled, soaked up some incredible teaching from David Platt, and rang in the New Year!

I am definitely thankful for all the memories of 2009, and I greatly look forward to what 2010 has in store for The Coles! I recently read an article from Campus Crusade's national director, Steve Douglas, and it highly encouraged me to move forward into 2010 with dreams and resolutions. Paul the apostle said, "Forgetting what lies behind and reaching forward to what lies ahead, I press on toward the goal for the prize of the upward call of God in Christ Jesus. " (Philippians 3:13-14) Steve Douglass wrote, "There are some lessons in that passage for each of us. By all means, we should be grateful to God for all that He has done in the past, but know that God is not through with us yet. He has many more people who need to come to Him. As we enter a new year, let's not stop with reflections. May we move on to dreams, plans, and resolutions, and then to further action in the power of the Holy Spirit. In the spirit of beginning a new year and in the spirit of the exhortation of the apostle Paul, let us reach forward and press on toward the goal to win the prize for which God has called you and me."
I have never been one to make New Year's resolutions, but after reading these words I decided I would enter into 2010 with some resolutions and some dreams! Therefore, I am going to share below some things I would like to improve in 2010, and some things I am hoping for in 2010.
1. I would like to be a better wife to my precious husband--I spend lots of time doing things for Kyle, but I need to spend more time just being with him and enjoying his company. I want to give him more of my attention because He deserves it! We would also like to have more date nights!
2. I would like to be a better friend. I definitely am the world's worst at phone calls! I want to take the time to have long conversations with good friends, and send notes when I know a friend needs it. Simply put, I need to do a better job of keeping up with friends - not just facebook them!
3. I would like to improve my Italian -- if I learn just a few phrases that will be an improvement! Being that I have such a huge heart for this country, I really need to invest some time in learning their language! And I think it so beautiful when spoken!
4. I want to be more healthy! Yes, the doctor has even ordered me to lose some pounds! I really do want to improve our diet by cooking healthier meals, and eating more whole grain foods. and a lot less sugar. I have my 10 year reunion this summer which is quite the incentive!
5. I want to share my faith more this year. I am going to pray for the opportunity to share the gospel with someone new at least once a week. I also want to do a better job of reaching out to our neighbors, and the community of Oxford. I hope to see a revival in the sororities at Ole Miss, specifically the KD house --may that begin when Marian Jordan comes to speak on January 28th!
6. Budget -- I somewhat cringe when I hear that word! I do want to be a better steward of our money. Kyle and I both are going to try really hard to stick to our budget this year. This means I am cutting way back on extra spending, and buy only things I need. For those of you who know me really well, this means less shopping which I happened to love. We desire to increase our giving by 10% each year, therefore we need to spend less.
7. Spend more time reading, and less time on the Internet and watching TV. No, I am not cutting out the Bachelor or Dancing with the Stars! But, I do waste so much time surfing the Internet or reading Facebook when I have hundreds of books I want to read. I love to read, and I think this would be such a better use of my time. (Book List coming soon)
8. I want to be completely surrendered to the Lord and abide in Him. I desire for my heart to be dominated by an affection for Christ! I want to spend more time with the Lord. I want to devote more time to studying His word, memorizing scripture, prayer, and fasting. I really want to grow more in spiritual disciplines.
9. This is totally random, but I would love to take a photography class. I just think this is something I would truly enjoy. I will have to see if I can find one in Oxford.
10. I want to develop a greater concern for the needs of this world. After hearing from Dr. Platt, I don't want to just give, I want to go! I don't want to chase the American dream, but instead I want to spend my life taking the gospel to the unreached people groups of this world.
11. Last but not least, I desire for the Lord to increase our family in 2010. I pray that the Father will grant us a child (or two) this year! Kyle and I strongly desires to be parents, and we trust that the Lord will give us a family in His timing. You can pray that will be 2010!
I am certain there are many more things I could include on this list, but these are definitely at the forefront of my mind and heart! I am also quite the realist, and I realize that most likely all of this will not happen! However, I am going to dream, and trust the Lord for BIG things in 2010!

La Bamba Casserole
My hubby is quite obsessed with Mexican food, so I am always looking for new dishes that have a Mexican flare. I have cooked taco salad, quesadillas, and enchiladas a thousand different ways. My dear friend Ellen told me about this recipe, and I decided to give it a try. It was a big win for Kyle and me! Hope it meets your expectations too!

Ingredients
- 1 (5.25-ounce) can whole green chiles, drained
- Cooking spray
- 1 pound ground turkey breast
- 1 cup chopped onion
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 garlic cloves, minced
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 2 cups frozen whole-kernel corn, thawed
- 1 (16-ounce) can fat-free refried beans
- 1 1/2 cups (6 ounces) shredded cheddar cheese
- 1 cup chopped tomato
- 1/2 cup chopped green onions
Preparation
Preheat oven to 375°.
Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; sauté 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.
Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375° for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.
Serve with tortillas, sour cream, and guacamole.

Can I get a Hotty Toddy?
COTTON BOWL CHAMPIONS
From Atlanta to Dallas we went! Except we had a short stop in Houston. Arriving at the Atlanta airport, we found out that our flight had been canceled! I think I am 5-0 at that place! AirTran flew us to Houston, and from there we rented a car and drove to Dallas! We did get 2 free round trip airline tickets though. Happy Anniversary to us! Kyle's grandparents gave all of us tickets to the Cotton Bowl for Christmas and sent us to Dallas! Thank you Bull and Peggie! We love you so much, and we brought you home a WIN!!! We had lots of fun in Dallas, and Jerry's World is incredibly nice! Almost didn't feel like you were at a football game! Yes, the game was a bit sloppy, but a W-I-N is a WIN!!! After the game, we got to eat at Mi Cocina, my favorite Mexican restaurant in Dallas. I think I ate my weight in guacamole! It is delicious! On Sunday morning, we did a quick tour of downtown Dallas, and checked out the JFK memorial. Great times were had by all in Dallas! Go Rebels! Hotty Toddy! Did I mention we WON?!?!?!

Unveiled 2009: Change Your World
Kyle and I spent five days of the Christmas break in Atlanta at Unveiled 09! Unveiled is a conference hosted by Campus Crusade for college students across the Southeast region.
