White Chocolate Peanut Butter Bites

This has become one of my favorite treats to make during the holidays! It is super easy and absolutely delicious! I first sampled it at Mistletoe Market a few years ago, and had to have the cookbook simply for this recipe! It comes from Table of Contents: Service, Settings, and Supper by The Junior League of Birmingham, Alabama. I shared some of this yummy treat with a friend last Christmas, and she said she ate it until she made herself sick! One bite is just not enough!

White Chocolate Peanut Butter Bites
MAKES 75 to 100 PIECES
INGREDIENTS:
4 cups crisp rice cereal
3 cups miniature marshmallows
1 cup crunchy peanut butter
1 cup dry roasted peanuts
4 cups (24 ounces) white chocolate morsels, melted

DIRECTIONS:
Mix the cereal, marshmallows, peanut butter, and peanuts in a large bowl with a spatula. Melt the white chocolate morsels in a saucepan over low heat, stirring constantly, or in the microwave on High for two minutes. Pour the white chocolate over the cereal mixture and quickly mix to coat. Spread the cereal mixture on a sheet of waxed paper and let stand until cool and firm. Break into small pieces and store in an airtight container.
