Hardy Moments in February

What a big month for our little Hardy! From sitting to crawling, our little guy has become very busy! Every month that passes I think "oh this has been the best!" It just gets better and better every day we share with Hardy. Yes, we are so so in love!

Ready, Set, GO!!

Hardy crawled for the first time on February 27th just before he turned 9 months! We captured this monumental accomplishment on video and I have shared them below. Kyle and I were so proud of him, but I believe he was even more proud of himself! Gone are the days of just sitting and playing. Let the fun begin!

Sweet Mammaw

On Monday, February 20th, Kyle's grandmother went home to be with the Lord. Her passing away was very unexpected, but we rejoice that she is now experiencing full joy in the presence of the Father. I did not know Mammaw extremely well, but in the little time I did spend with her I came to realize she was a gem of a woman! She was a very hard worker, and she loved her family. If I could use one word to describe Mammaw, it would be sacrifice. She loved her children so much, and she sacrificed a lot in her life in order to provide for them. Kyle and I typically always spend Christmas Eve with my family, but this year we spent it at Mammaw's. I am so thankful that we had that time with her, and that she got to spend it with Hardy. Kyle officiated the graveside service and shared mostly about heaven and what we will experience there. It was a beautiful day, and I felt like we got a little glimpse of heaven that morning. Thank you Mammaw for showing me what it looks like to love and serve your family well. Mammaw, you will be missed!

    Buffalo Chicken Tacos

    I'm not usually the gal who goes for spicy things...I'm a little more on the mild side. (Not in my personality--just my food! I'm just writing what some of you were already thinking!) Anyways, I stumbled upon this recipe on Pinterest--of course---and thought it was worthy of a try. Kyle could eat tacos every night of the week, so I am always looking for a taco recipe that shakes things up a bit. This one definitely did the trick. The buffalo sauce combined with the ranch dressing and avocado was just superb! If your hubby is a a big fan of buffalo wings, I certainly recommend giving this one a try! 

    Ingredients:
    1 pound chicken breasts, skinless, boneless, cut into 1 inch pieces
    ⅓ cup flour
    3 tablespoon cornstarch
    ⅛ teaspoon cayenne pepper
    1 teaspoon garlic powder
    ⅓ cup buffalo wing sauce (Frank’s Buffalo Wing) , plus extra for garnishment
    1 Tablespoon olive oil
    10 6-inch yellow corn tortillas
    Toppings:
    Shredded butter Lettuce
    Diced onions mixed with cilantro
    Avocado slices
    Ranch dressing
    Green onions, sliced thinly

    Preparation:
    Heat a large Dutch oven over medium-high heat.

    In a large bowl, combine cornstarch, flour, cayenne, and garlic powder. Season the chicken pieces with pepper, then dredge in the flour mixture.

    Add 1 tablespoon of olive oil to the Dutch oven and once it gets hot, add chicken and cook on both sides – about 3 to 4 minutes per side. Once the chicken is done, set it aside in a bowl and toss with ⅓ cup buffalo wing sauce.

    Assemble 10 tacos, dividing the toppings evenly among each taco.

    Visiting The Cuthbertsons

    My sister and her family moved from Louisville, Kentucky to Douglassville, Georgia two days after Christmas. Her husband took a job as associate paster of Prays Mill Baptist Church in Douglassville. We spent the Christmas holidays with Kyle's family, so we missed the move. I couldn't wait to see their new home and spend some time with them. My niece and nephews are so precious to me, and I just hate to go long periods of time without seeing them. My mom and I made a trip over this past weekend, and had a wonderful visit. The Lord has truly blessed them with their new home, and with the full basement downstairs, I felt like I had a mini retreat! I might just have to house sit for them one weekend. :) My mom, sister, and I had a great time staying up late every night visiting, and doing a little shopping at Nordstrom and Trader Joe's.  We also got to see one of Mikias' basketball games! As always, I had a blast and was so grateful to spend a weekend with my family!

    8 MONTHS

    8 Month Stats
    Weight: 16 lbs. 13 oz.
    Height: 28 1/4 inches
    Diaper Size: Size 3
    Clothes Size: Size 9 Months
    What Hardy Likes: Hardy loves a bath!
    He would stay in there until his toes
    shriveled up! Nana taught him how to splash,
    and he has a blast splashing around!
    What Hardy Dislikes: Long trips in the car!
    This is not going to be good with a 
    father whose nickname in 
    high school was activity Kyle!
    Best Moment of the Month:
    Hardy is sitting up all by himself!

    8 Month Highlights:
    You always sleep on your tummy now.
    If you fall asleep on your side for a nap,
    we know you will be up soon. You seem to
    sleep the best on your tummy.
    When you are really tired, you pull your
    ear and we know it is time for a nap.
    You dropped your dream feed this month.
    You really could have dropped it a while
    back, but I was just not ready. I cherished
    that time with you and just could not let it go!
    You now sleep from 8 at night to
    8 in the morning. Wahoo!!
    We are so proud of you!
    You started eating pear, asparagus, mango,
    butternut squash, and avocado this month.
    You absolutely love avocado and yogurt!
    It is hands down your favorite food.
    You now shake your head back
    and forth all the time now as if you
    are saying no. It is quite funny!
    You get so excited when you see Emmy now.
    I'm so happy that you are beginning to love her.
    Your biggest accomplishment this month is
    you sat up for the first time by yourself
    on January 17th. I was so nervous at first that
    I kept my hands right behind you. You would
    get tired after about five minutes, and fall back.
    Over the next few days, you got stronger and
    stronger and you would just sit forever playing
    with your toys! You are becoming such a big boy!
